Cheeky Corn Muffins

Having cornbread with Sunday lunch in the States is like having Yorkshire pudding with roast; an absolute must. Adapted from a favorite family recipe, Cheeky Cornbread muffins are the bread you didn’t know you were missing. Best served warm, they pair great with Sunday roast and your favourite winter soup alike!

Yield 48 mini muffins

Ingredients

  • 200g Cheeky Cheese (1 cup)
  • 1 cup plain flour
  • 1 cup polenta/corn meal
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 2 eggs
  • 1/3 cup butter, melted
  • 1 cup single cream
  • 1 200g can of sweetcorn

  1. In a large bowl, whisk together eggs and cream.
  2. Combine flour, polenta sugar, salt, baking powder into egg mixture.
  3. In small sauce pan, melt butter. Add Cheeky Cheese until softened.
  4. Mix Cheeky Cheese with all ingredients, and add corn last.
  5. Pour into greased mini muffin tins.
  6. Bake at 200 degrees C for 10 minutes, or until golden brown. Serve warm.

Cheeky Mac N Cheese

Serves 6-8

A family favourite with a Cheeky twist. Not just for an American Thanksgiving dinner, this side goes well with pulled pork and chicken alike, or can be fine served on its own.

Ingredients

  • 200 grams Cheeky Cheese (1 cup)
  • 250 grams macaroni
  • 1/3 cup butter, divided in 2
  • 1 cup single cream
  • 8 slices of streaky bacon, cooked and crumbled. *see note for cooking advice
  • Fresh bread crumbs
  • Sea Salt
  • Pepper

*Bake the bacon! Place rashers of bacon on a foiled baking sheet. Cook at 200C for 20-25 minutes until crispy.

  1. Preheat oven 180C – put casserole dish in oven with 1/2 of the butter to melt (takes about 5 or so minutes). Take casserole out once butter is melted.
  2. Bring large pot of water to boil and cook macaroni as instructed
  3. In sauce pan, add remaining butter and melt on a low heat. Whisk flour in (if the mixture is too “floury” add a little more butter to soften. Once the flour and butter are at a good consistency slowly stir in cream and Cheeky Cheese. Add *crumbled bacon, salt, and pepper to the mixture.
  4. In a large bowl mix all ingredients together and pour into casserole dish (with melted butter).
  5. Cover the casserole dish with fresh bread crumbs

Bake at 180C for 30-35 minutes, or until bread crumbs are golden brown.

Cheeky Peppers

Makes 6 Peppers

Dinner made easy! Everything you need in one dish, and under an hour to prepare and serve. What could be better than that?

Ingredients

  • 200g Cheeky Cheese (1 cup)
  • 250g minced beef (5% fat preferred)
  • 6 peppers (any color)
  • 1 yellow onion
  • 1 tablespoon (or so) of butter
  • Salt & pepper for seasoning

  1. Preheat oven to 180C
  2. Cut top of peppers off and clean out seeds.
  3. Bring large pot of water to a boil. Once boiling, add peppers to soften. Leave in pot for 5 minutes, or until softened.
  4. In a large pan on medium heat sauté chopped onion in butter until translucent. Add minced meat. Once meat is fully cooked, turn temperature down add Cheeky Cheese until fully mixed with meat.
  5. On a baking sheet, stand bell peppers up and fill with meat mixture. Cook for 20 minutes.
  6. Top with sour cream, and voila!

Cheeky Mash

Serves 4

For those nights you need comfort, jazz up your mashed potatoes with Cheeky Cheese!

Ingredients

  • 100g Cheeky Cheese (1/2 cup)
  • 1kg of red potatoes
  • 1/4 cup single Cream
  • Dollop of butter
  • Sea salt and cracked black pepper
  • Spring onions

  1. Bring large pot of water to a boil (enough to cover potatoes). Once boiling, add potatoes, skin on, and let boil for about 20-25 minutes, or until soft.
  2. Drain water and smash potatoes in large bowl
  3. Add butter, single cream, Cheeky Cheese and mix together.
  4. Top with salt and pepper to desired seasoning and garnish with spring onions.

Cheeky Cauliflower

Serves 6

Cauliflower cheese…with Cheeky Cheese. Sunday lunch just became much more indulgent!

Ingredients

  • 200 grams Cheeky Cheese (1 cup)
  • 1 large cauliflower floret
  • 600ml single cream (2 cups)
  • 1/3 cup butter, divided in 2
  • 8 slices of streaky bacon, cooked and crumbled. *see note for cooking advice
  • Fresh bread crumbs
  • Sea salt
  • Pepper

  1. Cut cauliflower into pieces (removing all leaves and stem)
  2. Preheat oven 200C – put casserole dish in oven with 1/2 of the butter to melt (takes about 5 or so minutes). Take casserole out once butter is melted.
  3. Bring large pot of water to a boil (enough to cover cauliflower). Once boiling, add cauliflower and let boil for about 20-25 minutes, or until soft.
  4. In sauce pan, add remaining butter and melt on a low heat. Whisk flour in (if the mixture is too “floury” add a little more butter to soften. Once the flour and butter are at a good consistency slowly stir in cream and Cheeky Cheese. Season with salt, and pepper.
  5. Mix all ingredients together and place in buttered baking dish and top with bread crumbs.
  6. Bake for 20-25 minutes until it starts to bubble and turn golden brown.

Cheeky Toastie

Known as a grilled cheese in the States, a Cheeky Cheese toastie is sure to warm your heart. Endless possibilities can be had and would love to see your take on a Cheeky Toastie!

Ingredients

  • Cheeky Cheese
  • 2 slices of good white bread
  • Mayonnaise
  • Tomato (Optional)
  • Honey mustard or dijon (Optional)

1. Melt about a tablespoon of butter in nonstick skillet on low heat

2. Put a touch of mayo on each slice of bread and smear about 1/2 cup of Cheeky Cheese onto bread.

3. Add sandwich onto skillet and grill until bread starts to golden.

4. Use a spatula to remove the sandwich from the skillet and wipe with a paper towel to remove burnt butter.

5. Add more butter and repeat toasting on other side.

6. Serve immediately.

*Super tasty dipped into Tomato Basil soup on a cold, winters day.

Cheeky Breakfast Casserole

Serves 6-8

Ingredients

  • 200g Cheeky Cheese (1 cup)
  • 12 eggs
  • 1 cup single cream
  • 1 pack of sausagemeat
  • 4-6 brioche rolls
  • Salt and pepper to taste
  • 1/4 cup maple syrup
  • 2 tablespoons butter

  1. Preheat oven 180C – put casserole dish in oven with butter to melt (takes about 5 or so minutes). Take casserole out once butter is melted.
  2. Tear apart brioche rolls into small pieces and cover the entire bottom of the casserole dish
  3. In skillet, brown sausage meat with maple syrup until fully cooked
  4. Evenly distribute sausage meat over bread.
  5. In small saucepan, soften the Cheeky Cheese. Pour over sausage and bread.
  6. In large bowl, whisk together eggs and cream and then pour over the cheese, sausage and bread.
  7. Cook for 35-40 minutes, until golden brown on top. Mixture should not be runny at all.
